BBQ Chicken Pizza

What's more classic than BBQ chicken pizza? All it really needs is lots of cheese, chicken, and BBQ sauce.... and a crust that can hold it all.

Normally that's not a problem when you can eat flours and starches. But living without complex carbohydrates makes pizza crusts a little more difficult. Nuts can work as a flour substitute--but often make for a pretty dense crust that can take away from the flavor of the whole pizza. Zucchini makes a great binder for eggs but is too watery to hold everything together. Cheese can also bind together ingredients but is also sometimes difficult for those who have a hard time with it. And so.... CAULIFLOWER PIZZA CRUST WAS BORN!!  It has a light taste and a fluffy texture. It's the perfect pizza crust!

Make sure to follow all the directions, though, or else it really won't be able to hold all your pizza toppings. And we wouldn't want that.

Oh my word. Have you noticed a trend with my photos? I can only ever get a couple of pictures before I can't take it anymore and have to EAT IT ALL!! Whyyyyyyy?????????

cauliflower crust1. Chop 1 head of cauliflower in to bite-size florets

cauliflower crust-22. Blend in food processor until it resembles little pieces of rice (you may have to do this in batches depending on the size of your food processor)

cauliflower crust-43. Steam over about 1 inch of water until it is tender, about 12 minutes.

4. Place in a bowl and refrigerate overnight.

6. Using a cheese cloth or thin dish towel, squeeze all the water you can out of it. There should be a ton!!!

7. In a large bowl, combine cauliflower, eggs, coconut flour, and salt.

bbq chicken pizza-39. Press into circular personal-sized crusts on a piece of parchment paper.

If you want a more consistent texture for your yogurt you will need to heat it all the way to 160° F, which will gently pasteurize it. Otherwise, your yogurt will have a pretty unpredictable texture, but will contain all possible enzymes and nutrients.

bbq chicken pizza-511. Bake at 450 ° F for about 8 minutes. Remove from the oven and put the other 3-4 crusts on the pizza stone to cook.

At this point you can either let the crusts cool and freeze them for later, or continue to top them and eat them immediately! To freeze, put a piece of wax or parchment paper in between them and stack in a ziploc bag. Thaw in the oven for 10 minutes before topping and cooking.

15. Bake for an additional 4 minutes, then switch the oven to broil for 3 more minutes.

16. Remove from the oven and let cool for 10 minutes before serving.

For the crust:

1 head cauliflower, about 1 1/2 lbs chopped
3 eggs, beaten with a fork
1/4 c coconut flour
1/2 tsp salt

For the pizza:

1 lb shredded grilled chicken
3 oz smoked gouda cheese
1/4 c chopped red onion
1 c homemade BBQ sauce
1/4 c chopped fresh cilantro

Directions:

Make the crust. Place chopped cauliflower in a food processor and process on high until it resembles little pieces of rice (you may have to do this in batches depending on the size of your food processor)
Steam over about 1 inch of water until it is tender, about 12 minutes.
Place in a bowl and refrigerate overnight.
Make the pizza. Preheat your oven to 450.
Remove the steamed cauliflower from the refrigerator. Using a cheese cloth or thin dish towel, squeeze all the water you can out of it. There should be a ton!!!
In a large bowl, combine cauliflower, eggs, coconut flour, and salt. Mix together well.
Take large handfuls (about 1/6 of the batter) and squash into a ball.
Press into 6-8 personal sized circular crusts on a piece of parchment paper.
Slide 3-4 crusts onto the heated pizza stone.
Bake at 450 ° F for about 8 minutes. Remove from oven and put the other 3-4 crusts on the pizza stone to cook.
Flip over the crusts and top with cheese, chicken, red onions, BBQ sauce, and cilantro. Sprinkle some cheese on top
Place back on pizza stone and bake for an additional 4 more min.
Switch your oven to broil and continue baking for 3 min.
Remove from the oven and let cool for 10 minutes before serving.
