Creamy Cauliflower Soup

Potato soups are one of my favorite. They are rich and comforting and pair well with lots of different flavors. But starchy foods are out when you are healing a leaky gut or a damaged bacterial flora.  Hence, cauliflower to the rescue! This cheesy cauliflower soup has such a creamy, satisfying texture, you won't be able to tell it's not potato!

Cauliflower is truly an amazing vegetable though and can be used to imitate potatoes in many dishes. Try mashed cauliflower or cauliflower pizza crust and you'll be surprised at what cauliflower can do!

Creamy Cauliflower Soup

Ingredients:

1 head cauliflower, stalk trimmed, chopped into florets (about 2 lbs chopped)
4 c homemade chicken broth
1 Tbsp salt
1 Tbsp ghee or butter (when tolerated)
1/8 tsp cayenne pepper (optional)
1 c grated cheddar cheese
1 tsp apple cider vinegar
2/3 c homemade sour cream

Directions:

In a large pot, combine the chopped cauliflower, chicken broth, vinegar, butter, salt, and cayenne pepper
Bring to a boil. Reduce heat to medium and simmer for about 10 minutes or until florets are easily piercable with a fork
Remove from heat and puree with an immersion blender (if using a normal blender make sure to leave an opening in the lid or else it could explode from the pressure of the steam!)
Grate 1 c cheddar cheese into soup
When cool enough to eat, add homemade sour cream (you don't want it too hot when you add the sour cream in order to keep the probiotics alive and beneficial)
Top with snipped chives for garnish *optional

Stage 1 Instructions: Add sour cream only if tolerated and do not add cayenne pepper. Cheddar cheese can be added in the Full GAPS diet.
