Country Sausage Soup

I frequently have dreams of living in the country and having my own horses. It's going to be somewhere near the mountains, where I can sit on my porch and watch the storms roll in from across the valley.  And then I'm going to put on my cowgirl hat and jump on my horse and ride into that storm until my soul is satisfied!!  (Hey, if it can happen to Ree Drummond, it can happen to me!)

I also dream of someone who will cook for me. So I don't have to cook everything.... all the time... always... everywhere.

Hmmm... I'm not sure which dream of those dreams will come true first. Or in this life.

But until one of them comes true, this soup will have to suffice. It's super simple to cook up and gives me just a taste of something I would slurp up while sitting on my porch on a cozy Pottery Barn outdoor sofa. Yup. That's my dream. Enjoy the soup!

Country Sausage Soup

Ingredients:

2 cups (about 4 oz) cooked italian sausage
4 cups beef or chicken broth
2 ribs celery, chopped
1 small onion, diced
2 carrots, chopped
1 1/2 teaspoon garlic salt

Directions:

Saute garlic and onion in butter until fragrant, about 3 minutes
Add the broth, celery, and carrot and bring to a boil
Simmer for about 15 minutes, or until celery and carrots are cooked all the way through
Add the sausage and simmer for a few minutes, until it is warmed
