Dairy-Free Eggnog (non-alcoholic)

The holidays are coming upon us quickly and it's time to start dreaming about wonderful, traditional holiday meals:) But for those on the GAPS diet or with other dietary restrictions, it's sometimes difficult to get as excited as in past years, knowing that you will be missing goodies and treats you used to love. This season, though, there's no need to miss holiday treats because I've created a healthy, delicious, dairy-free eggnog that everyone will love!

Coconut milk gives this eggnog the same rich and creamy texture as any classic holiday drink, but adds a delightful hint of sweet coconut. Add a little nutmeg and a touch of cloves and that's all you need for a wonderful, traditional, GAPS-approved eggnog.

And if dairy isn't a problem for you, go ahead and add some whey for extra nutrients, sub in some kefir, or just go ahead and use home-cultured cream!




Dairy-free Eggnog (non-alcoholic)

4 eggs
2 cups coconut milk (make sure it doesn't have any guar gum, like this one)
1/4 c honey
3/4 tsp nutmeg
pinch of cloves


Crack egg whites into a large mixing bowl and place egg yolks in a high speed blender*
Blend the egg yolks on medium for about 30 seconds
With the blender running, pour in the honey and blend until combined, about 15 seconds
Continue to pour in the coconut milk, nutmeg, and pinch of cloves
Beat the egg whites in the large mixing bowl until soft peaks form
Stir whites gently into egg mixture, chill, and serve!!

*Without a high-speed blender, use a hand-mixer on high in a large bowl
