Slow Cooker Banana Blueberry Bread

I'm going to let you in on a little secret... slow cookers can do literally ANYTHING!! And they are incredible time savers when you are living a GAPS, whole foods, or paleo diet. Many people imagine gut-healing diets to be just too time-consuming, especially for those working outside the home. (Understandably so, due to the need to cook all meals from scratch, using only nutrient-dense, fresh foods).

But I'll have you know that even when I started the GAPS diet--which was a COMPLETE 180 TURN-AROUND to how I was eating--I was teaching school full time AND working part-time after school. So it's totally possible.

But a slow cooker definitely saved my life.

So to help make healing the gut a little easier for others, I've been making lots of slow cooker recipes lately (do you see a theme going on here?;) there might be another secret I'll need to fill you in on sometime...) and I decided to try a slow cooker grain-free banana bread recipe! Sweet breads are very easy to throw together and very hard to mess up in a crockpot! The only caution is to either use a crockpot liner or to just make sure you don't over cook it, as the edges tend to burn more easily. Hope you enjoy an easy slow cooker grain-free dessert!!

Slow Cooker Banana Blueberry Bread

2 eggs
2 medium bananas
1/2 c cultured cream (or coconut milk)
2 c finely ground almond flour (I've had good turn out with Honeyville Almond Flour)
3 Tbsp coconut flour (this coconut flour is also a good quality, fine flour)
2 tsp baking soda
1 tsp cinnamon
1/4 c cold butter
1/3 c honey
2 Tbsp melted butter
1/2 c chopped pecans or almonds, lightly toasted
3/4 c blueberries


Lightly coat the bottom and sides of the slow cooker with butter (or line with a liner)
In a medium mixing bowl, mash the bananas with a fork.
Add the eggs and mix well with a fork until combined.
Add the cultured cream.
In a separate bowl, combine the dry ingredients.
Using a pastry cutter or two knives, cut in the 1/4 c cold butter until pea-sized.
Add the banana mixture to the dry ingredients and mix just until combined. Fold in the blueberries.
Spoon into the crockpot and just lightly spread to the outside.
Melt the butter and honey together in a saucepan and pour over the top.
Sprinkle with toasted pecans and almonds.
Cook on high for 1 hr 45 min, or 3.5 hours on low
