Grain-free Blueberry Muffins

This recipe has taken quite a bit of work--and I'm still tweaking it around a little bit. But I thought I'd share it anyways because they are pretty darn good and definitely make the cut when it comes to grain-free baked goods!! A lot of muffins I've tried from different sites end up being too dense and get caught in my throat. Probably because of too much coconut flour to try and hold all the other ingredients together. These grain-free blueberry muffins use a little bit of coconut flour and some ground flaxseed that hold a beautiful muffin shape but still make muffins that are light and fluffy. No need to be afraid of dense, cake-y GAPS-friendly muffins anymore!!

I don't often have baked goods for breakfast--savory foods like eggs, cooked vegetables, and sausages are full of healthy fats that keep energy levels stable and provide the gut healing fats to help heal digestive and inflammatory conditions. BUT sometimes you just gotta have BLUEBERRY MUFFINS! Buttery, fluffy, and bursting with blueberry juices, these grain-free blueberry muffins will sweeten up your day, no matter what time it is:)

Grain-free Blueberry Muffins

2 c almond flour
1/2 c ground flaxseed meal
1/4 coconut flour
1/2 tsp salt
2 tsp baking soda
3 eggs
1/2 c honey
1/3 c unsalted grass-fed butter
3 Tbsp water
3/4 c blueberries


Preheat the oven to 350°
Lightly grease a muffin tin with coconut oil or line with baking cups
In a large mixing bowl, cream together the honey and butter with a hand mixer
Add the eggs and water and beat until smooth
Add the rest of the dry ingredients and beat on medium until just combined
Fold in the blueberries
Fill muffin tin cups 2/3 of the way full and bake for 20 minutes, until a toothpick comes out clean.

    I made these with cranberries and orange zest at Christmas. They were delicious, although a little tart with the cranberries. Next time I make them, I might try adding a little more honey to offset the tartness of the cranberries, but thanks for the recipe. I’m a huge fan of muffins, and these are a delicious grain free way to enjoy muffins.
