Mango Banana Acai Bowl

I was completely oblivious to the wonder of acai bowls until only just a few days ago.

It happened the other day when I stopped by a little restaurant called Aubergine & Co during my lunch break. I'll sometimes stop there when I'm in a hurry and get a big, everything-dense salad with their fresh, homemade dressings. Their Salmon Salad with cranberry vinaigrette is SO GOOD!

They have a juice and smoothie bar, too, but for some reason I'd never really payed any attention to it. Well, the other day I happened to grow more curious and meandered over to look at their menu. All of their bowls and smoothies seemed to have fresh, real fruit ingredients but contained a few things I couldn't have on GAPS--agave and granola, for instance. I asked one of the employees if it were possible to just leave out these ingredients and she told me they could actually substitute them for GAPS-friendly ingredients like honey and almonds!! It's rare to find a GAPS friendly treat you can buy at a restaurant, so you can imagine my excitement when I was able to order something completely refined-sugar free and tasty.

I ended up getting a Pineapple Acai Bowl. It was absolutely heavenly. I ate up every bite.

I wish I had the budget to let someone else make my GAPS approved treats... but I don't. So I jumped over to Sprouts (which actually happened to be next door) and got a bunch of unsweetened acai puree and determined to make some heavenly acai bowls of my own. I had a lot of fun experimenting with different fruit combinations, but this Mango Banana Acai Bowl was hands down my favorite. I'm not exactly sure why because I don't usually like mango, but the tender mango-ey sweetness just balanced out the acai tartness beautifully. And somehow this Mango Banana Acai Bowl came together perfectly for a cold and fruity, nutrient-dense and vitamin-packed treat.

Mango Banana Acai Bowl

Ingredients:

1 mango
1 banana
1 packet 3.5 oz unsweetened frozen acai puree, broken into 3rds
1 Tbsp honey
2 Tbsp ground chia seeds
1 tsp vanilla extract

Toppings:

slivered almonds
chopped banana
shredded coconut

Directions:

Combine all smoothie ingredients in a high speed blender
Blend on low for 15 seconds, then on high for 30 seconds until smooth
Pour into a bowl and top with almonds, bananas, and shredded coconut
