Pork Burger Salad

This pork burger salad was inspired by Hilary Boynton and Mary G Brackett's pork burgers in The Heal Your Gut Cookbook. Homemade burgers take just minutes to make and are a simple, tasty way to use up any leftover ground pork! Don't bother looking for fresh, grass-fed, GAPS-friendly burgers in the store... you won't find any haha. Just buy some fresh ground pork from your trusted meat source and mix together with the flavors you want!

I loved the flavors in Hilary and Mary's pork burgers, but added a little twist of my own to make it just how I liked it. When served over fresh spinach, apple, and red onion, this burger feels 100x fresher and tastier than any greasy burger I've ever had!! Try it out and let me know what you think!!

Pork Burger Salad

For the burgers:

2 lbs ground pork
1 red onion, minced
2-3 garlic cloves, minced
2 egg yolks
2 Tbsp dried thyme
1 Tbsp dijon mustard
1 apple, shredded

For the salad:

2 apples, sliced thinly
1/2 c chopped red onion
4 c packed fresh baby spinach

Directions:

In a large bowl, combine all ingredients and mix with your hands until incorporated
Form into 6-8 patties and cook or grill over medium heat, for about 4 minutes each side
Serve on top of baby spinach, topped with apple slices and red onion
