Rosemary Sausage and Egg

This GAPS sausage recipe will get you wanting breakfast all day long!! A fresh herbs, red onion, and a few eggs make for an easy breakfast skillet worthy of any and every morning routine:) And your heart and brain with thank you for providing them with essential building blocks of life that keep them strong!

Eggs are one of the most nutritious and easily digestible foods on the planet. They are rich in amino acids, essential fatty acids, zinc, magnesium, and many other vitamins that support the immune and nervous systems. Dr Natasha Campbell-McBride goes to great effort in her book, Gut and Psychology Syndrome, to describe how cholin and cholesterol in eggs are key to supporting brain function, including learning processes and memory, and maintaining heart health.

Okay and this is what happens when I cook something I like too much---I can't get any photos of it! It just looks and smells too good that I sit down right there next to my camera and EAT IT ALL UP!

Rosemary Sausage Skillet

For the sausage:

1 lb ground beef (uncooked)
1 1/2 lb ground pork (uncooked)
2 tsp sage
2 tsp thyme
1 tsp rosemary
1/4 tsp red pepper flakes
1/4 tsp nutmeg
1 tsp salt
1 tsp pepper
1 tsp honey

For the skillet:

2 c cooked sausage
1/2 Tbsp organic, grass-fed butter
1/4 c chopped red onion
3 eggs
1 tsp dried rosemary leaves

Directions:

In a small bowl, mix together the dry ingredients
With your hands, combine the dry ingredients, pork, beef, and honey.
Crumble into a pan and brown over medium heat in a large skillet, and heat until cooked through.
Remove from heat. You can use however much you want for your breakfast skillet. Simply refrigerate or freeze the rest!
In a separate skillet, melt 1/2 Tbsp butter and then add the onions. Sauté over medium heat for about 4 minutes, or until fragrant.
Add about 2 c sausage and sprig of rosemary. Saute together for 1 minute.
Spread the sausage and onions around the skillet so there is room to crack the 3 eggs on top.
Cook over medium-low heat until whites of eggs are cooked through.
