Tomato Basil Soup

I have literally looked at every box of soup at every natural food stores here in Provo. And I have yet to find one that does not have sweeteners, preservatives, thickeners, or other additives. Surprised? Maybe not. But I was. I mean, how hard could it be to create a simple GAPS friendly soup?! You would think that immune-boosting, gut-healing foods would be popular in stores. But food industries in the U.S. tend to focus on flavor and shelf-life, not the food's magical properties.

So on busy days when I need some healing happening pronto, but only have a few minutes, I throw this tomato basil soup on the stove. It only takes a few ingredients--ones that I usually have on hand--and it is both comforting and absolutely delicious. I usually just eat it on its own, but sometimes I just really want a grilled cheese to go with it. I'm still searching for that one;) But I'll let you know when I find my perfect GAPS approved grilled cheese!

GAPS legal tomato soup


Tomato Basil Soup

3 Tbsp butter or ghee
1/2 medium onion, chopped (about 1 cup)
1 carrot, grated
2 lbs fresh, blanched tomatoes (or 1 26.46 oz box chopped Pomi tomatoes)
2 c homemade chicken or beef broth
3 Tbsp dried basil or 1/3 c packed fresh basil
1/2 tsp salt
1/2 tsp pepper


In saucepan, melt butter over medium heat; add onion and carrot and saute until onion is limp.
Stir in chicken or beef broth, chopped tomatoes, basil, salt, and pepper.
Cover and simmer for 15 minutes.
Cool slightly and then place mixture in blender and blend until smooth.
Spoon into bowls and top with a scoop of sour cream if desired.
